Mini-cheesecake

I wanted to bake mini-cheesecakes for the potluck at work tomorrow but to do so, I felt an urgency to clean all the residual dust out of the kitchen which has been building up due to the kitchen ceiling being partially open and the bathroom renovation happening above it. I washed almost everything and I replaced the ceiling panels and THEN I finally did some baking (Belgian chocolate and espresso).
